Champagne Dehours Trio S Non Vintage with White Sturgeon Caviar

Background

Champagne Dehours Trio S Non Vintage is a blend of 60% Pinot Meunier, 35% Chardonnay and 5% Pinot
Noir. This blend is made from a solera that began in 1998. The first bottling was from 2005. Each year a third of the solera is made into champagne and the solera is replenished with the wine from the current harvest. Dosage is 4 g/l.

Wine Description

The Champagne has a golden color with tiny bubbles. The aroma is flowery with orange citrus filled nutty
notes, ripe black berries and some minerality. A little bit of age is showing through with some oxidation notes.This is all so soft on the palate. On the finish there is a slight spiciness with the citrus shining and black fruit floral notes along with a spec of a sherry note.

Americana Caviar (White Sturgeon):The pairing brings out an orange toffee note as it cleanses the palate.
A great Lady Elena caviar champagne and caviar pairing.

Dehours Les Vignes de La Vallee Champagne NV with White Sturgeon Caviar

When presented with oysters and champagne it can only get better by adding some caviar .

A generous spoonful of White Sturgeon caviar added to these oysters just made this divine and with the Dehours Les Vignes de La Vallee Champagne NV this became divine and delicious.

Champagne and Caviar Pairing with Dehours Grande Reserve NV Champagne

Background:

The blend is 60% Pinot Meunier, 30% Chardonnay, and 10% Pinot Noir. 26% of the wine is reserve
wine from a Solera that was started in 1988.It was aged on its lees for 2 years and has a dosage of 6 g/l.

Wine Notes:

The champagne with a straw gold color has miniscule bubbles rushing t the top. There are aromas of toasted bread,white flowers, citrus and green apple. On the palate it is minerally soft with red fruits appearing. The finish is dry

Americana Caviar (White Sturgeon):The NV Dehours Grande Reserve champagne cleanses the palate with some remaining dryness. A good Lady Elena Caviar pairing.
