Santa Claus is receiving Osetra Caviar for the Holidays

LadyElenaCaviar.comSanta just found out from one of the elves that Mrs.Claus ordered some caviar from LadyElenaCaviar.com for the holidays. The talk amongst the elves is that she ordered Osetra caviar.

But did she order enough?

Served with food and canapes you can get about 10 servings per ounce of caviar. For the pure enjoyment of caviar by itself, the suggested single serving size is a half an ounce to one ounce.

I hope Mrs.Claus ordered enough for the big guy. He has a big belly to fill. But Santa knows that caviar is for tasting in small portions.

Bastianich Adriatico Friulano Paired with Kaluga Caviar

2012 Bastianich Adriatico Friulano

Background

The wine is from the DOC Colli Orientali Del Friuli and is made from 100% Friuliano grape.

The wine has a pale gold color. There are flowery aromas of ripe pears with almonds and a salty
minerality. There is biting acidity on the palate with a full body oily feel. The fruit is also picking up some spicy mint notes. The finish has some white pepper to it and finishes clean.

The 8th Pearl Caviar (Kaluga Hybrid Sturgeon): As the wine covers over the caviar, the sweetness of the pear softens and there is a lifting up of the mineralness of the caviar for a brief time. A great caviar and champagne pairing.

You need a currency called Gelt to play. For the Gelt I am thinking about using the Lady Elena Caviar jar lids. And as the rules read:If a player runs out of Gelt he losses and if a player ends up with all the Gelt she wins. In my version the winner wins a jar of O My Setra Osetra caviar and in the spirit of Hanukkah all the players enjoy some of the winners caviar.

Bruno Michel Champagne and Kaluga and White Sturgeon Caviar

Background

The champagne is 100% of the Chardonnay grape. The Chardonnay grapes are grown in the Premier Cru Les Brousses vineyard in Pierry. This is a very small village 2km south of Epernay. You will find this name located on the bottom of the foil wrapping on the bottle.

The champagne has a brilliant golden color with tiny streaming bubbles. These tiny bubbles bring an explosion of floralness that surrounds your glass, There are aromas of orange blossoms with some salty minerality and a touch of  brioche sweetness. On the palate you sense the slight oxidation with the citrus, toasted brioche and soft caramel. The finish is long with citrus, caramel, mineral notes and an acidity level that keeps it balanced.

The 8th Pearl Caviar (Kaluga Hybrid Sturgeon): The caviar neutralizes the fruit of the champagne but there is lingering soft caramel in the background with some chalk notes in this clean finish.. A great caviar and champagne pairing.

Americana Caviar (White Sturgeon): The caviar brings out the citrus and brioche of the champagne and blends in the nuttiness of the caviar. A great caviar and champagne pairing.

Thanksgiving Dinner with Caviar- Caviar Tacos

How fun is this -Tacos with caviar?

This recipe comes from Dean Fuller of Castle Ranch Steakhouse.

This is another great recipe but we are going to step it up with some real high quality caviar from Lady Elena Caviar and reduce the quantity needed from a full teaspoon to a half of teaspoon of caviar. The recipe calls for salmon roe. Salmon roe is exactly that -roe from salmon. This is not true caviar. Caviar comes only from the Sturgeon fish.

Ingredients:      

Idaho® Potato Caviar Tacos

Directions:

  1. Place the potato lengthwise on a flat surface and slice at a 45 degree angle, 3 thin slices, like a potato chip.
  2. Immerse in boiling water or a steamer for 5 seconds to soften and make pliable, then set aside and let cool.
  3. Next, fold up like a taco shell, and using tongs dip in 350°F oil until crisp. Option – spray with olive oil and bake in a 325°F oven until hard and golden brown. Set aside.
  4. Make a V-cut in the remaining portion of the potato (see picture) to make the taco-style shell. This V cut will let the boat sit up right on the stand. Coat with olive oil and bake for 45 minutes at 400°F or fry in 350°F oil for 5 to 10 minutes until golden brown . Set aside.
  5. With a stick blender or hand whip, whip the cream cheese until soft. Then put in a pastry bag with a small round tip.
  6. Slice a red radish very thin, cut into strips and immerse in ice water.
  7. Take the taco shell-style potato boat in one hand, hold gently and apply the cream cheese into the bottom of the shell, 3/4 of the way up.
  8. Add one-third of the strips of radishes per shell.
  9. Add half a teaspoon or less of Casual Caviar 1 (Hackleback Sturgeon) to the center top of the shell. (there are approximately ten 1/2 teaspoons to an ounce of caviar)
  10. Add 3 or 4 small sprigs of fresh dill. Place in the potato bases.

Thanksgiving Dinner With Caviar - Lady Elena Caviar and Idaho Potato Spoon

Ryan Whitman of Gracious Catering in Milwaukee, WI has created this recipe using Idaho potatoes and caviar.

This is a fun recipe. The creating of the chive oil and beet powder is for presentation purposes. We recommend that for times sake to focus on the main event of the fun spoon with that delicious caviar on top. We are going to modify the original recipe to make it more budget friendly. If time is short. sour cream is a good substitute for Creme Fraiche. Instead of the more expensive Osetra caviar we are recommending the White Sturgeon caviar. Our Lady Elena Caviar is of such high quality that it does not need to be masked with food. Our O My Setra caviar (Osetra) just deserves to be eaten straight from the spoon so that it is enjoyed in its purity. See bottom of recipe for coupon code.

 

 

Ingredients:
  • Chive Créme Fraiche
  • 2 1/8 cups Créme Fraiche
  • 2 ounces olive oil
  • 1 ounce fresh chives
  • salt and pepper 
Directions:
Chive Créme Fraiche
  1. In blender combine all ingredients until smooth. Season with salt and pepper to taste. If your local grocer does not provide crème fraiche, you can substitute with 1 cups sour cream and 1/8 cup buttermilk.
Chive Oil
  1. Combine all ingredients in a bar blender. Season with salt and pepper to taste.
Caviar

  2. Served Chilled.
Spoon
  1. Make a spoon template using a plastic container lid. Slice potato very thin. Lay potato under template and cut out with a paring knife. Fry at 340 degrees until golden brown
Beet Powder
  1. Dry in an oven at 150 degrees for approximately 12 hours. Then grind in a coffee grinder.
Presentation: Place two pedals from an edible flower on a plate. Adorn the potato spoon with chive créme fraiche and chilled caviar. Drizzle the plate with chive oil. Sprinkle with a line of beet powder.

Thanksgiving Dinner With Caviar - Some Ideas from Lady Elena

Marscarpone Mashed Idaho Potatoes with Caviar

Allen Susser from Chef Allen's Consulting has created this recipe using Idaho Potatoes and caviar. This recipe makes a suggested 4 servings.

We love the recipe but to make this more accessible to everyone's budget we suggest that you keep the recipe as is but half the serving size. ( Do not worry about not having a 3 inch ring mold.) We also recommend the use of our caviar and the Casual Caviar 1 (Hackleback Caviar) to reduce the cost but still have the great caviar food pairing experience. Also, our caviar is high quality and we do not recommend the use of lemon juice on the greens and have removed it from this recipe.

Mascarpone Mashed Idaho® Potatoes with Meyer Lemon

Ingredients:

  • 4 large Idaho® potatoes, peeled
  • 1 1/2 teaspoons kosher salt, divided
  • 2 teaspoons butter, room temperature
  • 3 tablespoons mascarpone cheese
  • 1 Meyer lemon (regular lemon may be substituted), washed, zested with microplane 
  • 1 ounce of Lady Elena Cavir - Americana Caviar (White Sturgeon) or Casual Caviar 1 (Hackleback)
  • 1/2 teaspoon freshly ground black pepper
  • mixed micro greens
  • 2 teaspoons extra-virgin olive oil

Directions:

  1. Place your order for Lady Elena Caviar at http://ladyelenacaviar.com/products
  2. In medium ovenproof saucepan, bring potatoes to boil with 1 teaspoon salt and water to cover by 3 to 4 inches. Lower to simmer; cook until fork-tender, about 25 minutes. Drain. (If potatoes are still moist, dry slightly in preheated 350°F oven for 10 minutes.)
  3. Using manual food mill, mill potatoes into large bowl. Add butter; mash. Add mascarpone, lemon zest, remaining salt and pepper. Mix until just blended.
  4. To plate, divide potato mixture among four 3-in. ring molds, gently pressing down with back of a teaspoon dipped in water. Lift molds slightly; top potato mixture with 1/4 oz. caviar, forming a circle of caviar around rim of ring. Place on individual plates; remove ring mold.
  5.  Drizzle the mixed micro greens with extra-virgin olive oil, toss and add as garnish to potato rounds.
  6. Enjoy the flavor of the caviar with the potato.

This champagne is a blend of 64% Pinot Noir and 34% Chardonnay.

The champagne is bursting at first with tiny streaming bubbles and then they slowly become streaming microscopic bubbles.There is nice blend of toffee and citrus aromas with a mineral softness. On the palate there is some wood cellar mixed with toasted yeast, toffee and lemon citrus. The finish has a slight coconut sweetness with orange toffee and some spiciness.

2011 Devevey Chassagne Montrachet Paired with White Sturgeon Caviar

Background 
Based in Demigny, the estate has 6.32 hectares of vines. The chardonnay grapes for this wine are sourced outside the estate.


The wine has a brilliant light golden color. There are aromas of flowery orange, pears with a soft creamy buttery note. On the palate the wine has a full bodied bright freshness and is nicely integrated. The finish has slight soft creamy minerally butter note with an acidity level that keeps the wine so well balanced and fresh.

The wine is made of 100% Verdejo from the Reuda region in Spain.

The wine has a pale straw color with green tints. There are aromas of grapefruit pith,orange, peach and soft minerals. On the palate it is medium bodied with minerality, grapefruit and citrus. On the finish the fruits pickup a tropical note. The soft minerals follow through with a high acidic pleasant finish.

The champagne is a blend of 40% Pinot Noir 40%, Chardonnay and 20% Pinot Meunier. The champagne ages on its lees for an average of three years. It has a dosage of 7g/l with 12% ABV.

Wine Notes

The champagne has a golden straw color with tiny streaming bubbles creating a multi strand pearl necklace at the top of the glass. There are aromas of fresh pear, lemon, biscuit and salty minerals. On the palate it is floral with some coconut sweetness and nuttiness showing. The finish has a minerally driven softness and is dry.

Background

The 2013 Pinot Gris is produced from certified sustainable Ponzi Aurora, Avellana and Estate Vineyards, Linda Vista, Gemini, Dion, Walnut Ridge, Ridge Road, Kraemer and Zenith Vineyards. The wine was fermented in temperature controlled stainless-steel tanks. Malolactic fermentation was prevented. The choice of closure was the Stelvin screwcap.  Alcohol is 12.8% with a residual sugar level of 5.7g/ resulting in a dry wine.

Wine Notes

The wine is made from 100% Pinot Gris and has a pale straw color. There are aromas of pears, fresh honeydew melon with apples. On the palate the wine has a medium bodied feel with the pear skin and apple. There is also some white pepper with an herbal mint note. On the dry finish the fruits coat your tongue and is followed by mouth watering acidity. Easy drinking.

Background

Boundary Breaks Riesling wines are from the Finger Lakes region of New York. Boundary Breaks only focus is on the vineyards and planted their first vines in 2009. Also, they only focus on the Riesling grape variety with four different Riesling clones being grown in separate vineyards.The wine making process is carried out by local Finger Lake wineries.

The wine tasted today is their Riesling from clone #239. 11.6 ABV with .9% residual sugar. 

Wine Notes

The wine has a pale straw color with green tints. There are aromas of stony minerals with lime and sweet apricot. On the palate it is lively with its biting acidity. There is a touch of sweetness here but balanced with the soft minerality. The finish is dry and minerally soft while filled with lime and mouth watering acidity. There is the right amount of sweetness to show some fruit in the wine while keeping the wine a dry Riesling.

Background:

The blend is 33% Pinot Noir and 67% Chardonnay.

Wine Notes:

The champagne has a dark golden color and there are little to none tiny bubbles. There are aromas of sweet honey caramel and citrus with some mushroom. On the palate minerality pops through the caramel. There is brioche and sweet coconut with quince. The tiny bubbles appear so gently on the palate. The finish is filled with a burst of soft fruit with caramel and citrus. Other than the decrease in bubbles, the wine is standing strong.

Wine Notes:

The champagne has a golden color and is filled with non stop streaming tiny bubbles. There is a creamy yeasty caramel aroma with notes of sweet fruit and soft minerality. This flows through to the palate in another layer with lemon curd and some nuttiness. The finish is long with caramel and notes of some black fruit.

2009 Weingut Knoll Loibner Federspiel Gruner Veltliner Paired with White Sturgeon Caviar

This wine is from the Wachau region of Austria and is 100% Gruner Veltliner. The name of this wine includes the term-Federspiel. This  is the second highest quality level specific to the Wachau region.

The wine has a pale gold color. There are aromas of white flower, orange rind, apricot and peppery herbs. On the medium bodied palate the peppery herbs become more pronounced. The wine has a medium length mouth watering finish with the pepperiness showing thorough.

The wine is 100% Sauvignon Blanc from Sancerre.

The wine has a pale golden color. There are aromas of smokey flint and flowery creamy grapefruit which also shows through on the palate. The wine is full bodied with a slight waxy feel. The finish has some grapefruit pith and is mouthwatering refreshing.

2012 Bruni Per Laia Vermentino Paired with the White Sturgeon and Siberian Sturgeon Caviar

The 2012 Bruni Per Laia is made form the Vermentino grape in Maremma Tuscany Italy. The wine was fermented in barrique for six to eight months.

The wine has a pale gold color. There are aromas of mild creamy soft apricot and white peaches with a smokey salty mineral note. On the palate it is medium bodied with slightly soft creaminess, delicate fruits and a touch of green herbs. The finish is dry and filled with acidity that balances out the wines creaminess. Very easy to drink.

Caviar Pairing with 2012 Spy Valley Riesling

The grapes come from the Johnson Estate vineyards in Marlborough, New Zealand.


The wine has a light golden color. There are aromas of stoney mineral covered peaches and green apples. On the palate the wine is minerally focused with soft fruit notes including some citrus. The finish is short and clean.
