This is real black caviar from sturgeons. Many of these caviars have a buttery smoothness. Yes, you will probably taste salt. All the caviars are Malossol (low salt). Keep in mind that salt is used to cure the sturgeon roe.

Each variety has its own different taste. Some can be more buttery than others and others can have more of sea tang. Many people find that using crème fraiche helps reduce the saltiness. The nutty blini can compliment the caviar. 

Have fun and try your caviar:

1) straight off a non metallic spoon
2) off a spoon with a dab of crème fraiche
3) on a blini (no crème fraiche)
4) on a blini with crème fraiche
5) if you like oysters then you will love a dab of caviar on your oyster

Other Caviar Tips

The blini should be served at room temperature or slightly warm. 

The caviar jar / tin should be kept on a bed of ice to maintain a constant cool temperature before serving.

2015 Idaia Winery Ocean Thrapsathiri Wine from Crete

On this beautiful island the winery is located in the Venerato village in the heart of the Malevizi wine district.
The vineyards are located about 1,300 feet above sea level and have mostly a calcium clay soil. With the cooling summer breezes off of the Aegean Sea and with the vineyards elevation they are producing cool region white wines with freshness and crisp acidity.

This wine is made from 100% of the indigenous grape variety of Thrapsathiri. This varietal is grown throughout Crete and it makes a well balanced wine. The wine has a straw color with green tints. There are aromas of ripe melons, peaches and a breeze of minerality which extend onto the palate. There is a bit of mouth watering lemon on the refreshing finish.

Champagne Dehours Trio S Non Vintage with White Sturgeon Caviar

Background

Champagne Dehours Trio S Non Vintage is a blend of 60% Pinot Meunier, 35% Chardonnay and 5% Pinot
Noir. This blend is made from a solera that began in 1998. The first bottling was from 2005. Each year a third of the solera is made into champagne and the solera is replenished with the wine from the current harvest. Dosage is 4 g/l.

Wine Description

The Champagne has a golden color with tiny bubbles. The aroma is flowery with orange citrus filled nutty
notes, ripe black berries and some minerality. A little bit of age is showing through with some oxidation notes.This is all so soft on the palate. On the finish there is a slight spiciness with the citrus shining and black fruit floral notes along with a spec of a sherry note.

Background

The country of Georgia is located at the exact same latitude (approx. 40° N) as Southern France and Central Italy.
Bagrationi 1882 is the leading sparkling wine house in the country of Georgia and has an 80% domestic market share. It was back in 1882 that their sparkling wine achieved international recognition

Wine Description

This wine is an equal blend of Chinebuli, Mtsvane and Tsitska which are indigenous to country of Georgia.
This sparkling wine is made using the Charmat method which can be noticed by its small + sized bubbles. The wine has a pale straw color with green tints.There are aromas of nutty green citrus with a slight apple notes and is delicately floral. On the palate there is a sweet nuttiness with honey dew melon notes. The finish has soft citrus notes
