Background:

The blend is 33% Pinot Noir and 67% Chardonnay.

Wine Notes:

The champagne has a dark golden color and there are little to none tiny bubbles. There are aromas of sweet honey caramel and citrus with some mushroom. On the palate minerality pops through the caramel. There is brioche and sweet coconut with quince. The tiny bubbles appear so gently on the palate. The finish is filled with a burst of soft fruit with caramel and citrus. Other than the decrease in bubbles, the wine is standing strong.

Lady Elena Caviar Pairing

O My Setra Caviar (Russian Sturgeon Osetra): At first the flavors of the champagne just flow over the caviar and then all is neutralized with a clean finish. A great Lady Elena Caviar pairing.

The 8th Pearl (Kaluga Hybrid): Honey and caramel flavors are released as the champagne glides over your tongue and finishes with slight dryness. A good Lady Elena Caviar pairing.

2011 Domaine des Aubuisieres Cuvee de Silex Vouvray Paired with 2 Caviars from Lady Elena Caviar

The wine is 100% Chenin Blanc. Domaine  des Aubuisieresis located in the heart of Vouvray in the Loire Valley in France with vineyards planted on clayish silicious soils.

The wine has a straw gold color. There are aromas of lime,chalk, honey and oranges. The wine on the palate is soft and filled with lime and honey. The finish is slightly dry with chalk notes and then becomes mouthwatering.

Lady Elena Caviar and Wine Pairing

The 8th Pearl Caviar (Kaluga Hybrid): The caviar brings out the fruit in the wine with some slight salinity. The wine slowly cleanses the palate with a dry finish. A great Lady Elena Caviar pairing.

Elegance (Golden Osetra): The wine covers over the caviar, cleans the palate with a slight dry chalk finish. A good Lady Elena Caviar pairing.
