2015 Chateau Sainte Marie Vieilles Vignes Blanc

The estate located in Targon, the heart of the Entre-Deux-Mers area, has been around for centuries but only as recent as recent 1956 has been producing wine. In 1956 the Dupuch-Mondon family took over with the passion that good wines are made with. This Blanc is made from grapes from their 25 Ha of old vines (vieilles vignes). Here the vines are planted in clay soil with chalk.

                                                                       Wine Description

This 2015 Chateau Sainte Marie Vieilles Vignes Blanc is a blend of 63% Sauvignon Blanc, 27% Semillon and 10% Muscadelle that was vinified in stainless steel tanks. Prior to bottling, the wine aged for 6 months in stainless steel tanks.
The wine has a pale straw color in the glass. From the aromas flowing from the glass to the dry finish there are orange blossoms and gooseberry with underlying white peach adding a touch of sweetness.

Lilbert and Fils Champagne Blanc de Blancs and White Sturgeon Caviar

This 2009 Lilbert and Fils Champagne Blanc de Blancs from Cramant is a good pairing with our Lady Elena White Sturgeon caviar.

Background 

The Lilbert Fils estate is located in the village of Cramant. Their 8.6 hectares of vineyards, located on tuffeau and chalk soils, are all Grand Cru and only Chardonnay grapes are grown. 60% of their vineyards are located in Cramant,, 30% in Chouilly, and 10% in Oiry on the Cote des Blancs. The vinification is all in stainless steel vats and undergo maloactic fermentation.

Wine Description

The champagne is 100% Chardonnay from Cramant with. a dosage of 5 g/l. The wine ages between four and a half to five years before being released.
  
The champagne has a pale gold color with tiny streaming bubbles. There are floral aromas of orange blossoms, green apple with some anise. On the palate, the minerality shows itself in this well integrated wine. The dry finish has the orange blossoms and green apples with a touch of toasty brioche.

Americana Caviar (White Sturgeon): The caviar softens the green apple flavors as the champagne cleanses the palate.

Background
Champagne Moussé Fils is a grower located in the region of Vallée de la Marne in the village of Cuilses. Here the focus is on Pinot Meunier which comprises 80% of the vines with the balance of 16% Pinot Noir and 4% Chardonnay.  Their four vineyards totaling 5.5 hectares are located in Cuisles, Jonquery, Olizy-Violaine, Châtillon-sur-Marne on a soil of schist subsoil under clay.
     

Cuvée Noire Réserve Blanc de Noirs NV

Description
The wine in this bottle is 50% from 2010 and the rest from the reserve wines of 2009, 2008, 2007 and was disgorged after four years on its lees.
 
Tasting Notes

The wine has a straw gold color with tiny streaming bubbles. There are aromas of sweet, yeasty, minerally citrus, with some sweet berry tones. On the palate there is a creamy mineral softness with the layered flavors. The finish is clean with some floralness. This is so enjoyable with its freshness of the fruit and it creamy softness all through out.

Americana Caviar (White Sturgeon): This was a delightful pairing. The freshness and creaminess of the champagne with the creamy minerals of the caviar complemented each other. The champagne also left your palate cleansed and refreshed.

Taittinger Comtes de Champagne Blanc de Blancs and Osetra Caviar

2004 Taittinger Comtes de Champagne Blanc de Blancs Paired with Osetra Caviar

Background

The champagne is 100% of the Chardonnay grape. The grapes grown in the top vineyards of the
Côte des Blancs. Only the first press juice is used.  5% of the blend spends three to four months in new oak barrels, enhancing complexity of the final blend. Prior to disgorgement, the Blanc de Blancs is aged for 10 years on the lees in 13th-century chalk cellars that were once the property of Saint Nicaise abbey.

The champagne has a pale gold color with greenish tints along with its tiny streaming bubbles. There are aromas of lemon curd,fresh toasted biscuits, red apples with a smoky stony minerality. On the palate it is tense with creamy softness. There is some sweet citrus combined with some salty minerality lingering on the palate. The finish is dry an slightly mouth watering. This champagne is still very youthful.

O My Setra Caviar (Osetra): This pairing brings out the nuttiness of the caviar and then the palate is left cleansed.

2014 Tenuta delle Terre Nere Etna Bianco DOC




When you talk about wines from Etna, we are talking about vineyards grown on the steep slopes of an active volcano.

Tenuta delle Terre Nere is located in the northern slopes of the volcano, with vineyards between the village of Solicchiata and the town of Randazzo at altitudes of 600 to 900 meters above sea level. With the location of being on a volcano it is no surprise that the soils are filled with mineral driven black volcanic pumice, sand, ash and that the soils are covered with the black volcanic pumice.

This 2014 Tenuta delle Terre Nere Etna Bianco DOC is made from a field blend of the local varieties of 60% Carricante, 25% Catarratto, 10%Grecanico and 5% Minella. The wine was vinified all in stainless steel tanks.

Wine Description

The wine has a straw color with green tints. There are aromas of smoky minerals with a white peach floralness. On the palate, as in the finish, the wine is filled with soft minerality with undertones of the fresh fruit. It also has a clean finish to it.
This pairs nicely with White Sturgeon caviar.
