Champagne Frerejean Freres Premier Cru Brut and White Sturgeon Caviar Pairing
Champagne Frerejean Frères Premier Cru Brut
and
Champagne Frerejean Frères is a small Premier Cru Champagne House founded by the
Taittinger brothers, Guillaume, Richard and Rodolphe. They produce only Premier
Cru champagnes that are made from a single vintage and single crus.
Frerejean Frères Premier Cru, is located 6 miles South of
Epernay, straddling the Cote des Blancs and the Village of Grauves with the cellars located in Grauves.
They use the three traditional grapes for champagne. The
Chardonnay grapes come from the Premier Cru vineyards of the Cote
des Blancs with the Pinot Noir and Pinot Meunier also grown in Premier Cru
Vineyards with the same soils.
This champagne is a blend of 50% Chardonnay, 30% Pinot Noir
and 20% Pinot Meunier and is aged for five years on the lees before
disgorgement with a dosage level of 6.5 g/l. Then it ages for another year in
the cellar before release.
Champagne Description
The Frerejean Frères Premier Cru Brut champagne has a golden yellow color with fine streaming bubbles. There are aromas of orange blossoms, ripe peach, pear, brioche and speckles of spice. On the palate there is soft minerally nutty citrus. The finish is layered with minerality, ripe peach, almond and caramel notes that linger. The roundness and complexity of this champagne makes it so enjoyable alone and will pair with so many different foods.

This champagne was made from the 2012 harvest from their own vineyards in the village of Le Mesnil sur Oger. There is such freshness and purity present in this champagne. The wine is filled with minerality, green apple and citrus with a touch of pear skin.With a dosage level of 7 g/l it helps take some of the edge off on the finish.
I had the opportunity to meet Yves Moncuit, Pierre's son, and taste through some of his champagnes with White Sturgeon caviar from Lady Elena Caviar. Here is the first pairing.

2015 Chateau Sainte Marie Vieilles Vignes Blanc
The estate located in Targon, the heart of the Entre-Deux-Mers area, has been around for centuries but only as recent as recent 1956 has been producing wine. In 1956 the Dupuch-Mondon family took over with the passion that good wines are made with. This Blanc is made from grapes from their 25 Ha of old vines (vieilles vignes). Here the vines are planted in clay soil with chalk.
Wine Description

This 2015 Chateau Sainte Marie Vieilles Vignes Blanc is a blend of 63% Sauvignon Blanc, 27% Semillon and 10% Muscadelle that was vinified in stainless steel tanks. Prior to bottling, the wine aged for 6 months in stainless steel tanks.
The wine has a pale straw color in the glass. From the aromas flowing from the glass to the dry finish there are orange blossoms and gooseberry with underlying white peach adding a touch of sweetness.

This 2009 Lilbert and Fils Champagne Blanc de Blancs from Cramant is a good pairing with our Lady Elena White Sturgeon caviar.
Background
The Lilbert Fils estate is located in the village of Cramant. Their 8.6 hectares of vineyards, located on tuffeau and chalk soils, are all Grand Cru and only Chardonnay grapes are grown. 60% of their vineyards are located in Cramant,, 30% in Chouilly, and 10% in Oiry on the Cote des Blancs. The vinification is all in stainless steel vats and undergo maloactic fermentation.
Wine Description
The champagne is 100% Chardonnay from Cramant with. a dosage of 5 g/l. The wine ages between four and a half to five years before being released.
The champagne has a pale gold color with tiny streaming bubbles. There are floral aromas of orange blossoms, green apple with some anise. On the palate, the minerality shows itself in this well integrated wine. The dry finish has the orange blossoms and green apples with a touch of toasty brioche.
