Champagne Stephane Coquilette with White Sturgeon Caviar
Champagne Coquillette is located in Chouilly. Here they create a dryer champagne from Chouilly (Grand Cru), Cuis (1er Cru 99%) for Chardonnay and d'Ay (Grand Cru) and Mareuil/Ay (1er Cru 99%) for Pinot Noir. Organic farming practices are very important to this grower.

2010 Stephane Coquillette Champagne By Louis Brut Zero Blanc de Noirs is a champagne of 100% Pinot Noir with no dosage and is aged in old oak barrels.
Champagne and Caviar
The champagne has aromas of minerally soft black fruits with caramel undertones. On the palate the caramel becomes more prominent with some spice notes all with underlying black fruits but with freshness. The finish includes some sweet brioche with rich fruit that lingers.

With this pairing the caviar cuts the caramel out and leaves the freshness of the black fruits with sweet brioche. A great Lady Elena Caviar and champagne pairing.

Champagne and Caviar with Charles Ellner Carte Blanche Brut and White Sturgeon Caviar

The Charles Ellner Carte Blanche Brut NV champagne is a blend of 30% Pinot Noir, 30% Chardonnay, and 40% Pinot Meunier.This wine was blended with wines from the 2008 and 2009 harvests. It was bottled in 2010 and rests in the cellar for at least 4 years before release. The dosage is 10 g/l.

Champagne and Caviar

The champagne has a floral freshness of purity in the aromas with almonds, lemon, cherry blossoms and with a little sweet yeast. On the palate the minerality shows.The finish is slightly mouthwatering with all of the minerality and floralness. Power and elegance combined.

With this pairing we have the sweetness of the wine blending with the minerality of each. It finishes with the softene fruit lingering and then a cleansed palate. A great Lady Elena Caviar and champagne pairing.

Lallier Champagne Series R Code

Since September 2015 Champagne Lallier has changed their label on their champagnes in their Permanent
collection.

New Code on Label


In fairly decent size letters there is a new code on the label informing us of the harvest year for the wine.

Here is an example code  R.2012.  The R represents the first letter of Recolte which is French for "harvest". Therefore R.012 represents the house style of Lallier  using  mostly the grapes of the 2012 harvest with the balance comprising of reserve wines.


This is not a vintage champagne. It is the Lallier house style which over time will show how the predominate harvest year has an effect during its ageing.

Chateau Gazin of Pomerol

2003 Chateau Gazin
It is now showing its age. That youth full fruit of a few years ago has relaxed to a less powerful wine.

This is a blend of mostly Merlot with some Cabernet Sauvignon and Cabernet Franc. The wine has more subtleties now which makes it a different pleasant experience. It still has a youthful color and its freshness. Drink it sooner than later.

1990 Dominus Wine (Dominus Spiritus Sanctus)

This 1990 Dominus wine from Christian Moueix in Napa Valley is a great after church wine or anytime wine.

If you are looking for an overpowering fruit bomb in this 1990 look elsewhere. This is about Napa Valley fruit not being masked by the wine making process. An hour after the bottle was opened, it slowly opened up some more.

There are gentle aromas of concentrated black cherries,charred oak and undertones of menthol. On the palate there are dense powerful elegant tannins. These tannins just melt away on the elegant finish.

Truly a bottle of wine that can age and it came with its cellar dust.
